The Pomalo Debit Pet Nat is a natural sparkling white wine from the Dalmatian coast of Croatia — light-bodied, briny, and alive with the energy of the sea. Debit is one of Dalmatia’s most interesting indigenous white grapes, and in pet-nat form it becomes something genuinely joyful: fizzy, fresh, and completely at home with seafood and sunshine.

The Grape — Debit, Northern Dalmatia

The Debit grape grows between the coastline and the mountains near Šibenik in Northern Dalmatia — a unique microclimate that provides intense Mediterranean sun during the day for natural ripeness, and cool mountain breezes at night to preserve acidity.

Winemaking

Grapes are destemmed and macerated on the skins for approximately five days, giving the wine a slightly deeper golden colour and a more textured, grippy mouthfeel. Bottled before fermentation completes in the méthode ancestrale tradition, so the wine finishes fermenting in the bottle and develops its natural bubbles with no additions. Hazy, lively, alive.

Tasting Notes

Light-bodied and zesty. Lemon, pear, and a salty sea-breeze minerality lead the way. High natural acidity. Gentle, frothy bubbles rather than aggressive carbonation. The skin contact adds a subtle texture that makes this more interesting than your average summer fizz.

How to Serve

Serve very cold. Open carefully — shake nothing. Pour immediately into a wide-mouthed glass. Drink outdoors, preferably near water.

Food Pairing

Fresh cracked sea urchin, oysters, ceviche, raw bar, grilled white fish, octopus salad. Anything that benefits from the same briny, mineral quality the wine carries.
