Pomalo Debit Pet Nat

The Pomalo Debit Pet Nat is a natural sparkling white wine from the Dalmatian coast of Croatia. The grapes for this wine are grown between the coastline and the mountains. This unique microclimate provides intense Mediterranean sun during the day (for ripeness) and cool mountain breezes at night (to preserve acidity). The grapes are typically destemmed and macerated on the skins for about 5 days. This gives the wine a slightly deeper golden color and a more textured, "grippy" mouthfeel compared to standard white wines. It is light-bodied and zesty. The flavor profile leads with lemon, pear, and a salty, sea-breeze minerality.  It has high acidity and a gentle, frothy "mousse" (bubbles) rather than the aggressive carbonation found in Champagne.
