Val de Mer Chablis

Val de Mer Chablis is a highly regarded white wine produced by the acclaimed winemaker Patrick Piuze. Known for capturing the classic, old-school essence of the Chablis region, it relies on strict precision and purity. Like all authentic white Chablis, it is made entirely from Chardonnay grapes. However, because it is fermented and aged in stainless steel tanks rather than oak barrels, it tastes entirely different from the rich, buttery, oak-heavy Chardonnays often found in the New World. Patrick Piuze intentionally ages Val de Mer in an above-ground cellar rather than deep underground. This allows the wine to naturally interact with the shifting temperatures of the seasons, resulting in a highly traditional, articulate style of Chablis that acts as a great snapshot of its terroir (soil and climate).
