
Takju 16, Hana Makgeolli
Hana Makgeolli Takju 16 is the signature "nostalgic" brew from the Brooklyn-based brewery. Unlike its clarified sibling Yakju 14, Takju 16 is an unfiltered, undiluted Korean rice wine (sool) that celebrates the creamy, rustic roots of the category while pushing it into a high-ABV, craft territory. It is brewed using organic medium-grain white rice and organic sweet (glutinous) rice. It is unfiltered and contains natural rice sediment, giving it a creamy, chalky, and substantial mouthfeel. Despite this "milk-like" appearance, it is fermented to near-dryness, so it lacks the sugary heaviness of commercial brands. Extremely aromatic with notes of overripe melon, banana pith, and green apple. The flavor profile is floral and "wild," finishing dry with a lingering taste of toasted grain and a pleasant fermented funk.
