
Sake Ono Junmai Daiginjo
As a Junmai Daiginjo, this sake is crafted using only four ingredients: water, rice, koji, and yeast, with no added distilled alcohol. It is brewed using a proprietary blend of estate-grown and locally sourced Niigata rice, specifically Gohyakumangoku and Ipponjime. These grains are polished to 50%, removing the outer proteins to reach the starchy core. It is characterized by a medium, silky, and velvety body. While it maintains the light and crisp finish typical of Niigata sakes, it has enough "heft" and suppleness on the palate to stand up to substantial food pairings.
