Pinot Grigio. Stanko Radikon is a maverick in a land of mavericks. The town of Oslavia, on a relatively tiny stretch of hills north of the border town of Gorizia in Friuli, is home to a number of talented and individualistic winemakers. From Radikon's home, you can carry a plate of freshly cooked polenta to Joško Gravner's cellar — two other world-renowned producers — and still eat it piping hot.
"Sivi" means grey or grey-pink in Slovenian — a reference to the grey-pink skin of Pinot Grigio, which in Radikon's hands becomes a profound wine rather than a commercial commodity. Extended skin contact, no SO₂, no filtration. Amber in colour, tannic and mineral on the palate, with the complexity that only the Oslavia ponca terroir and Radikon's philosophy produce.
Winemaking
Pinot Grigio from Radikon's Oslavia estate. Extended maceration with the skins in large old Slavonian oak vessels. No sulfur dioxide added at any stage. No fining. No filtration. Aged for multiple years before release. The wine is what the grape and the vintage produced, nothing more.
Tasting Notes
Copper-amber in colour. On the nose: dried apricot, orange peel, rose hip, chamomile, beeswax, and the specific saline mineral depth of the ponca marl-sandstone soil. On the palate: real tannin, very high natural acidity, full body, and extraordinary length. This is what Pinot Grigio is when treated as the serious grape it actually is.
How to Serve
Serve at 14–16°C. Open at least one hour before serving. Use a large red wine glass. Serve alongside food — the tannin and acidity need something to work against.
Food Pairing
Aged hard cheese, prosciutto di San Daniele, charcuterie, roast pork, fatty fish (salmon, mackerel), spiced dishes from South Asian or Middle Eastern cuisines.
