Often overlooked in Dalmatian reds for its more robust peers like Plavac Mali and Babić, Plavina is an incredible coastal red varietal that delivers Dalmatian terroir while maintaining freshness and elegance. Pomalo — meaning “take it easy” in Croatian — captures that philosophy perfectly: great wine, no pretension, serve chilled, pour again.
The Producer — Pomalo, Northern Dalmatia
Pomalo’s vineyards sit inland near the historic town of Šibenik, on slopes between 50 and 300 metres above sea level. The terrain is limestone through and through, with a Mediterranean climate that brings warm days, cool nights, and constant coastal breezes. Practicing organic, no irrigation.
Winemaking
Destemmed into a rotary fermenter. Spontaneous fermentation begins after two days and continues at low temperature (14–16°C), preserving the freshness and fruit character of the grape. Pressed off skins after ten days, mid-fermentation, then allowed to finish in stainless steel. Light filtration and minimal sulfur at bottling only.
Tasting Notes
Yummy aromas of plum jam over breakfast pastries pop from the glass. A textured but balanced palate of dark cherry and cinnamon raisin bread, with youthful and easy-going tannins. A perfect chillable and crushable Dalmatian red. Pair with sunsets over the Adriatic, grilling in your bathing suit, or sipping late night as the bonfire dies down.
How to Serve
Serve lightly chilled — 30 minutes in the fridge or 15 minutes in an ice bucket. This is the wine for the moment, not the cellar.
Food Pairing
Grilled fish, grilled vegetables, cured meats and cheese, sausages, hearty soups, homemade burgers, pizza. Versatile enough for a light steak but honest enough for whatever comes off the grill.
