Philokalia "Grapes of Wrath" Bethlehem Amber is an artisanal orange wine (skin-contact white) from Bethlehem, Palestine. Produced by architect-turned-winemaker Sari Khoury, this wine is famous not just for its quality, but for the resilience of the vines—many of which grew back through boulders and debris after the vineyard site was partially cleared for a settlement road. Because it undergoes significant skin maceration (1 to 8 weeks depending on the plot), it has a textured, almost phenolic weight. It is aged in amphorae made from Palestinian black clay excavated in Gaza, which contributes to a rounded, velvety mouthfeel. Highly aromatic with notes of apricot skin, dried orange peel, honey, and a distinct herbal/earthy undertone reminiscent of dried mountain sage. The palate is dry and savory. You will find flavors of bruised apple, tea leaves, and stone fruit, supported by a light tannic grip and a long, mineral-driven finish.
