Sangiovese is Tuscany's soul grape — the variety behind Chianti, Brunello, and Vino Nobile. Here, Ottomani takes it in a different direction entirely: fermented and aged in terracotta anfora, without oak, without additions, without filtration. What you get is Sangiovese stripped to its most elemental character — cherry and dried herb expressed without any scaffolding.

The Producer — Ottomani, Tuscany

Ottomani is a small Tuscan producer committed to amphora winemaking as a philosophy rather than a trend. Terracotta, which predates oak aging by several thousand years, imparts a gentle mineral quality and slight oxidative note without adding flavour. The result is wines of unusual directness — the grape and the place, undisguised.

Winemaking

Sangiovese fermented and aged in terracotta anfora. No new oak influence. No commercial yeasts. No fining agents. No filtration. The winemaking adds nothing and removes nothing — what is in the bottle is what the grape and the vintage produced.

Tasting Notes

Bright ruby with an earthy, mineral quality. The nose is direct: fresh cherry, dried herbs, light spice, and the subtle clay mineral note that terracotta uniquely imparts. Medium-bodied on the palate, with lively natural acidity and the gentle tannins that make Sangiovese such an ideal food wine. Clean, honest, and satisfying.

How to Serve

Serve at 16–17°C. No decanting needed. Open, pour, eat. The Tuscan approach.

Food Pairing

Pasta al ragù, pizza, roast chicken, grilled vegetables, aged pecorino. The quintessential Italian table wine, made without compromise.
