Trebbiano Toscano and Malvasia Bianca Lunga — the two most widely planted white grapes in Tuscany, usually made into light, simple whites for everyday drinking. In Ottomani's hands, fermented and aged in terracotta anfora with skin contact, they become something else entirely: amber, complex, textural, with the mineral depth that only clay-vessel aging and extended maceration can produce.

Ottomani is dedicated to amphora winemaking as a genuine philosophy — not a stylistic flourish. Terracotta predates oak by millennia and adds a specific mineral quality without flavour. No additions, no filtration. What ferments in the vessel is what goes in the bottle.

Winemaking

Fermented and aged in terracotta anfora with skin contact. The skins add colour, tannin, and aromatic complexity that standard white wine production removes. No commercial yeasts, no fining agents, no filtration, no additions of any kind.

Tasting Notes

Amber in colour from the skin contact. On the nose: dried apricot, orange peel, white flowers, and the subtle mineral quality of the terracotta vessel. On the palate: textured and slightly tannic, with good natural acidity and a savoury, mineral finish. An orange wine that shows what Tuscany's workhorse white grapes can become with genuine minimal intervention.

How to Serve

Serve at 14–16°C — slightly warmer than conventional white wine. Open 30 minutes before serving. Excellent with food.

Food Pairing

Aged hard cheese, charcuterie, roast pork, pasta with truffle, grilled mushrooms. The tannin and texture handle rich, savoury dishes that defeat conventional white wines.
