Olivier Pithon is one of the pioneering natural winemakers of Roussillon — a producer who has been working the steep schist and limestone terraces of the far south of France for decades, producing wines of extraordinary depth from Grenache, Carignan, Muscat, and other varieties that thrive in this fierce Mediterranean climate.

Mac2 is his Muscat: two varieties (Alexandrie and Blanc à Petits Grains) macerating together for five months. The result is an orange wine that is floral, complex, and unlike any conventional Muscat — the skin contact adds texture, grip, and aromatic depth that transforms the variety’s naturally effusive character into something serious and age-worthy.

Tasting Notes

Deeply aromatic: dried orange flower, apricot, quince, and the specific savoury complexity that extended Muscat maceration uniquely produces. Textured and grippy on the palate, dry and long. A remarkable wine for a variety rarely treated this way.

Food Pairing

Tagines, Moroccan-inspired dishes, aged soft cheese, foie gras, spiced lamb.
