The 2023 Ocho “Who Do You Love?” Saperavi is a bold, natural red wine and the “darker” counterpart to the amber Mtsvane in the Ocho range. Produced in Kakheti, Georgia, from Saperavi — Georgia’s most important red grape — this wine is a pure, high-energy expression of what Saperavi does when made with minimal intervention and maximum character.

About Saperavi

Saperavi is one of the few teinturier grapes in the world — meaning its flesh, not just its skin, is red. This gives wines made from it an almost opaque, inky character that is impossible to achieve with any other variety. Combined with Saperavi’s naturally high acidity and grippy tannins, you get a wine of extraordinary structure that ages remarkably and demands food in return.

Tasting Notes

Opaque deep ruby with a vibrant purple rim. On the nose: powerful black cherry, pomegranate, wild dark berries, savory notes of black tea, tobacco, and a hint of forest floor. Full-bodied on the palate with “grippy” tannins and Saperavi’s high natural acidity. Plum and blackberry jam with a mineral, stony backbone. Decant or open one hour before serving.

How to Serve

Decant for at least one hour. Serve at 17–18°C. This wine improves dramatically with air.

Food Pairing

Roast lamb with herbs, slow-cooked beef, khinkali (Georgian dumplings), wild boar, aged hard cheese. The food of the Caucasus — and anything richly savoury.
