Schmetterling means butterfly in German — a fitting name for a wine that is light, aromatic, and transformative. 100% from the best parcels of Riesling and Müller Thurgau from Terrassen Mosel vineyards in Winningen, Kobern, and Lehmen — the steep-sloped, south-facing Mosel terraces where the river bends and vines cling to the cliff face at angles that defy easy farming.
Wild spontaneous fermentation, skin contact varying by parcel from 2 to 15 days depending on the character of the grapes, then 6 months on fine lees in mature barriques. Hard pressed into barrel. Bottled without filtration, fining, or sulfur. Everything about this wine reflects the character of the site rather than the winemaker’s preferences.
Tasting Notes
Aromatic and textural, with the specific slate-mineral character of Terrassen Mosel soils. Riesling’s citrus and floral notes alongside Müller Thurgau’s roundness and body. The skin contact adds grip and complexity that conventional Mosel Riesling never achieves.
Food Pairing
Smoked fish, charcuterie, aged goat cheese, roast pork, Asian cuisine.
