Chien Rouge (Red Dog) proves that co-fermentation of grape varieties across the colour spectrum is a magical operation. Three weeks of maceration of Grenache Gris, Blancs and Noirs together in the same vessel produces something that is somewhere between rosé, light red, and orange wine — ruby red in the glass but with the freshness and aromatic complexity of a skin-contact white. Roussillon, in the far south of France near the Spanish border, produces Grenache of extraordinary character.
Tasting Notes
Fresh-fruited and ruby red, with flecks of green herbs and rose petals. This is somewhere between Tavel, Calce, and everywhere in between. Juicy, bright, and genuinely mind-blowing in its originality. A wine that challenges categories and wins.
How to Serve
Serve slightly chilled at 14–16°C. Excellent as an aperitif or with food.
