Jean Aubron Vieilles Vignes Sauvignon Blanc
This gorgeous Sauvignon Blanc comes from 40+ year old vines grown on gabbro and volcanic soils, fermented in stainless, unfined, lightly filtered and lightly sulfured. The result is mouth-wateringly refreshing and easy to drink.
With vines planted in a completely different sort of soil called gabbro (basically crumbly granite), Jean-Pascal lovingly tends the land like his ancestors did for generations. He starts the fermentation in stainless steel, then transfers the wines to glass-lined underground tanks to let them sit on their lees until he feels they’re ready, creating Sauvignons, Folle Blanches & Muscadets that are aromatically expressive, with striking acidity, minerality and salinity but also with stunning purity of fruit.
