Grape Republic is based in Nanyo City, Yamagata Prefecture — a landlocked mountain region in northern Japan with an intense continental climate: hot summers, cold winters, significant temperature variation between day and night that concentrates aromatics and preserves natural acidity. The farmland and winery facility sit in hills to the north, with fertile ground spreading south. The grapes are grown on land that had been increasingly abandoned before Grape Republic began its revival work.
Dela is a Japanese-developed Muscat hybrid with extraordinary aromatic intensity — think concentrated grape character, floral, and lychee, but with the freshness that Yamagata’s climate preserves. This is Japanese natural wine: the terroir concept applied to a country with its own distinct viticulture, its own native yeasts, its own specific climate.
Tasting Notes
Aromatic and immediately distinctive. Muscat family character — floral, lychee, white grape — with good natural acidity from the mountain climate. Fresh, clean, and entirely specific to where it comes from.
How to Serve
Serve cold at 8–10°C. The wine of curiosity and pleasure.
Food Pairing
Japanese cuisine naturally: sushi, sashimi, yakitori, tempura. Also excellent with Thai cuisine, Vietnamese food, fresh cheese, and light Asian-inspired dishes.
