Georgia’s most famous red grape, Saperavi, fermented and aged in traditional qvevri — the buried clay vessels that Georgia has been using for wine production for 8,000 years. Qvevri winemaking adds a specific mineral, reductive depth to the wine that conventional tank or barrel production cannot achieve; combined with Saperavi’s naturally inky colour, high acidity, and grippy tannins, the result is something genuinely unlike any other red wine on earth.
Tasting Notes
Deep purple, almost black. Black currant, plum, leather, and dark chocolate on the nose. Full-bodied on the palate with structured tannins, high natural acidity, and a long, earthy finish. The qvevri aging adds a specific mineral, clay-vessel character that intensifies over time in bottle.
How to Serve
Decant for 45 minutes. Serve at 17–18°C. A 2019 vintage means it’s drinking well now and will continue to develop.
Food Pairing
Roast lamb, khinkali, slow-cooked beef, wild boar, aged hard cheese. The food of the Georgian table.
