From the Conzelman Vineyard in Anderson Valley — planted in 1981, making these 40+ year old Chardonnay vines that produce fruit of exceptional depth and character. Anderson Valley’s cool, fog-influenced climate produces naturally high-acid Chardonnay with intense varietal aromatics and genuine aging potential.
Lily’s Pet Nat is made by the méthode ancestrale: spontaneous fermentation begun in tank, bottled before the first fermentation completes so the wine finishes in bottle, capturing the CO₂. Zero additions at any stage. Then disgorged to clarify. The result is a California pét-nat with the full depth of Anderson Valley old-vine Chardonnay behind it.
Tasting Notes
Sparkling Chardonnay with genuine complexity from the old vines and the specific character of Anderson Valley. Green apple, citrus, and a toasty, lees-derived depth from the in-bottle fermentation. Dry and bright, with the freshness of natural sparkling wine and the structure of serious Chardonnay.
Food Pairing
Oysters, smoked salmon, fried chicken, soft cheese, California casual. The celebratory opener and the sustained table wine.
