La Mariole is a 4th-generation Languedoc estate making biodynamic Carignan from 100-year-old vines — one of the older Carignan plantings in the south of France. Carignan from old vines is a very different wine from Carignan grown in younger plantings: the century-old root systems produce fruit of concentration and complexity that younger vines cannot achieve, and the natural acidity that Carignan always provides keeps the wine energetic and food-friendly.
Tasting Notes
Dark ruby. Concentrated dark fruit, pepper, dried herbs, and the specific earthy-mineral quality that century-old Languedoc Carignan produces. Aged in fiberglass and concrete to preserve freshness rather than add oak character. Unfiltered. Fruit, structure, and elegance in equal measure.
How to Serve
Serve at 16–17°C. Can be opened immediately or given 30 minutes of air.
Food Pairing
Grilled lamb, cassoulet, roast duck, aged hard cheese. The food of the Languedoc table.
