Organic. 100% Chardonnay. A blend of select sites from about 4 villages in the southern Mâcon. Each year, Phillippe and Guillaume barrel taste and select the final blend. Vines range from 15-40 years old. Direct press into stainless steel tanks, settled, spontaneously fermented and aged in a combination of used and new (max 20%) barrel of varying sizes (228L and 350L) for 8-9 months according to the vintage. Bottled unfined, unfiltered.
