
Domaine de la Cotelleraie Les Perruches Bourgueil 2019
"Les Perruches" is located within the Saint Nicolas de Bourgueil appellation, specifically on gravelly hillocks. These hillocks consist of a thick layer of clay-siliceous gravel with iron-rich sediment at a deeper level. This terroir is planted exclusively with Cabernet Franc vines, at least 25 years old.
Harvesting and winemaking: The grapes are harvested manually and then sorted berry by berry at optimal ripeness.
The winemaking process is carried out traditionally in wooden vats after destemming. Punching down is performed twice a day for about ten days. Maceration is long (approximately one month), and malolactic fermentation often occurs under the cap. Alcoholic fermentation begins naturally one day after vatting.
Aging: The wines are then transferred to barrels. They will remain there for a year. Afterwards, they will be racked and bottled without filtration or fining.
Character: A very fine Saint Nicolas De Bourgueil, brilliant and intense with notes of ripe fruit: the attack on the palate develops on a tannic structure, velvety and silky, with a rich and concentrated finish.
