Domaine Bibich is one of Croatia’s most adventurous and critically acclaimed wineries, based in the Plastovo area of Northern Dalmatia near Šibenik. Roko Bibich combines a deep respect for Croatia’s indigenous varieties with the confidence to work with international grapes on his terms — not to imitate other wine regions, but to show what Dalmatian terroir does to Shiraz when the philosophy is minimal intervention and honest farming.

Tasting Notes
Deep, dark, and aromatic: dark plum, black pepper, smoked meat, dried herbs, and a mineral undercurrent from the Dalmatian limestone. Full-bodied with confident tannins and enough acidity to keep everything in balance.
How to Serve
Decant for 30 minutes. Serve at 17–18°C. This is an evening wine — open it with intention.
