Single parcel, old vine Xarel·lo from an idyllic vineyard called El Bosc — “the forest” — surrounded on three sides by woods, crops, and olive trees. A respite from the bustle of Barcelona, only 40km away, this parcel is ruled by a great diversity of flora and fauna, inhabited only by wild goats, boar, and the pensive winemaker with whom they share the vines. Only 950 bottles produced.
Xarel·lo is the indigenous white variety of the Penedès that Cava is built on — but old-vine single-parcel Xarel·lo like this has nothing in common with commercial Cava production. With age and respect, the variety produces wines of genuine mineral depth and aromatic complexity.
